Celebration Layer Cake Recipe - (4.4/5) image

Number Of Ingredients 8

1 3/4 cups (280g) all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
8 Tbs (1 stick/125g) unsalted butter
1 1/3 cups (345g) sugar
1 1/2 tsp vanilla extract
2 eggs
1 cup (250ml) milk

Steps:

  • 1. Have all ingredients at room temperature. Preheat oven to 350 degrees F. Grease and flour 2 celebration layer cake pans. 2. In a bowl, whisk together the flour, baking powder and salt until combined; set aside. 3. In the bowl of an electric mixer fitted with the flat beater, beat together the butter, sugar and vanilla on medium speed until creamy, about 3 minutes. Stop the mixer and scrape down the sides of the bowl with a rubber spatula. Add the eggs one at a time, beating well on medium speed after each addition. Stop the mixer and scrape down the sides of the bowl. 4. Reduce the speed to low and add the flour mixture in 3 additions, alternating with the milk and beginning and ending with the flour. Beat each addition until just incorporated, stopping the mixer occasionally to scrape down the sides of the bowl. Fold in any unincorporated flour. 5. Pour about 1 cup (250ml) batter into each prepared pan, smoothing the top with an offset spatula. Bake until a toothpick inserted in to the center of each cake comes out clean, 10 to 12 minutes. Transfer the pans to wire racks and let cool for 5 minutes, then turn the cakes out onto the racks and let cool completely. Meanwhile, wash and dry the pans, grease and flour them, and repeat to bake the remaining batter. 6. When the cakes are completely cool, fill and frost them as desired. Makes 4 cake layers.
