CARROT THYME SOUP image

Yield 6 1 bowl

Number Of Ingredients 9

6 Cups Chicken Broth
1 Pound Carrots cleaned and cut into 1-inch pieces
1 onion, minced
4 Tbsp Butter
1 1/2 Tbsp Flour
1/2 cup Heavy Cream
1 1/2 Tbsp fresh thyme & additional for garnish
pinch nutmeg
salt & pepper to taste

Steps:

  • Combine chicken broth and carrots, bring to boil and simmer for 20 minutes or until tender. Puree the mixture in batches, and add back to the stock pot. In a seperate pan saute the onion in butter over moderate heat until softened. Add the flour and continue cooking for 2 minutes, stirring constantly. Add the above onion mixture to the soup along with the cream, thyme and nutmeg. Season to taste with salt & pepper. Bring to boil for 5 minutes and garnish with fresh thyme before serving.
