CARROT CAKE IN A MUG image

These recipes are such great ideas for a single serving. Imagine in the middle of the night when a sweet tooth craving hits you and you have this recipe at hand to make! How wonderful!!! Cane life be easier?

Number Of Ingredients 15

large coffe mug that is
oven-proof and microwavable
6 Tbsp all purpose flour
2 Tbsp sugar, your choice, white or brown
1/4 tsp baking soda
1/8 tsp salt
1/4 tsp cinnamon
1/8 tsp nutmeg
MIX YOUR DRY INGREDIENTS WITH A FORK, THEN ADD:
4 Tbsp o.j. or milk or buttermilk would work
2 Tbsp vegetable oil
1/4 tsp vanilla
3 Tbsp carrots, finely grated
1 Tbsp pecans, chopped (opt.)
1 Tbsp raisins (opt.)

Steps:

  • 1. Mix it all up and make sure that you reach the bottom of the mug, too, mix well.
  • 2. Microwave for 2 to 2 1/2 minutes. Let it cool a bit. Dollop with cream cheese and drizzle some honey on top.
