CARROT CAKE image

Yield 12 Servings

Number Of Ingredients 18

2 cups sugar
1 1/2 c. Wesson Oil
4 eggs (beat well)
Mix above together.
Then sift together:
1 1/2 teaspoons soda
2 teaspoons cinnamon
2 cups self-rising flour
3 cups grated raw carrots
(After grating, put carrots into a cloth, squeeze out excess moisture. Be sure to still get 3 cups after squeezing.)
Add above to mixture - makes 3 layers
Icing
1 box confectioners sugar (10X)
1 stick butter
1 8 oz. pkg. cream cheese
1 teaspoon vanilla
Mix well
Add 1 cup chopped pecans

Steps:

  • Mix 1st 3 ingredients together. Sift remaining ingredients. Add sifted ingredients and remaining ingredients. Makes 3 layers.
