Carrot Cake Recipe image

This is an incredibly moist carrot cake... largely due to the applesauce. It's a simple cake with no fancy ingredients. The final result is tender, sweet, and fluffy. There is no pineapple or raisins in this recipe. So, those carrot cake non-believers may enjoy this recipe. The pillowy cream cheese frosting is delicious on this carrot cake.

2 cup(s) all-purpose flour
2 cup(s) white sugar
1 teaspoon(s) salt
2 teaspoon(s) ground cinnamon
1/2 teaspoon(s) nutmeg
1 teaspoon(s) baking soda
1/2 teaspoon(s) baking powder
4 - eggs
1/2 cup(s) vegetable oil
1 cup(s) applesauce, unsweetened
3 cup(s) grated carrots
1 1/2 cup(s) walnuts (preferably black)
16 ounce(s) softened cream cheese
1/2 cup(s) butter, softened
3 1/2 cup(s) confectioners' sugar
1 teaspoon(s) vanilla extract

Steps:

  • Preheat oven to 350 degrees. Grease two 9" cake pans.
  • Combine the sugar, flour, salt, cinnamon, nutmeg, baking soda, baking powder, oil, and applesauce.
  • Add in the eggs one at a time with an electric mixer.
  • Stir in the carrots and walnuts by hand.
  • Bake for 40 minutes.
  • Cool completely before frosting.
  • To make frosting cream the butter and cream cheese together with an electric mixer. Add the confectioners sugar a little at a time. Add the vanilla last.
  • Frost the cake.
