This is an incredibly moist carrot cake... largely due to the applesauce. It's a simple cake with no fancy ingredients. The final result is tender, sweet, and fluffy. There is no pineapple or raisins in this recipe. So, those carrot cake non-believers may enjoy this recipe. The pillowy cream cheese frosting is delicious on this carrot cake.

Steps:
- Preheat oven to 350 degrees. Grease two 9" cake pans.
- Combine the sugar, flour, salt, cinnamon, nutmeg, baking soda, baking powder, oil, and applesauce.
- Add in the eggs one at a time with an electric mixer.
- Stir in the carrots and walnuts by hand.
- Bake for 40 minutes.
- Cool completely before frosting.
- To make frosting cream the butter and cream cheese together with an electric mixer. Add the confectioners sugar a little at a time. Add the vanilla last.
- Frost the cake.
