CARROT AND SWEET POTATO SOUP image

Number Of Ingredients 12

2 tbsp butter
1/2 c chopped onion, med
1 1/2 lbs carrots, peeled and sliced
2 apples, golden delicious
3=14 oz cans chicken or veggie broth
1 c. water
2 med sweet potatos, peeled and chopped
2 bay leaves
1/8 tsp allspice
1 tbsp butter
2 tsp finely chopped orange peel
1/4 c orange juice

Steps:

  • 1. In dutch oven, melt butter over med heat. Add onion and cook 2 mins. Stir in carrots, cook for 3 mins. Peel core and chop one apple. Stir in apple, broth,water, sweet pots, bay leaves and allspice into carrot mix. Bring boiling water and reduce. Cover and simmer for 20-25 mins. 2. Garnish- finely chop remaining apple. In small skillet melt butter over med. heat. Add apllenad cook 5 mins. Stir in orange peel. Set asdie. 3. Discard bay leaves. Cool soup slightly. Use hand blender to puree. Stir in OJ and simmer for 5 mins until hot again.
