CARRIBEAN PORK TENDERLOIN image

Caribbean Rub
1 lb. Brown sugar
3 T cumin
1.5 T salt
1.5T ground black pepper
1.5 T ground cloves
1/3 C chili powder
1.5 T garlic powder
1 t white pepper
1 t crushed red chilis
1 t ground nutmeg
4 # pork tenderloin
2 C ripe fresh mango, puréed

Steps:

  • Throughly combine all the spices. Rub the pork with the rub. Make sure that it is well coated. Smoke or grill until an internal temperature of 150° is reached. Glaze with the mango puree and heat a few more minutes. Slice and serve.
