Carne Adovada image

Carne Adovada is a braised pork dish made with a puree of coffee, raisins and chili powder

1 c strong black coffee
1/3 c raisins
1/4 c flour
1/3 c chili powder
1 tsp mexican oregano
1 tsp salt
2 Tbsp olive oil
1 large onion chopped
8 clove garlic minced
2 chipotle chili in adobo sauce minced
4 c chicken broth
5 lb boneless pork shoulder
limes,rice, pico de gallo, sour cream for serving

Steps:

  • 1. Preheat oven 325 degrees. Add raisins to the hot cup of coffee and set aside. In a small bowl mix the flour, chili powder, and oregano together. Set aside
  • 2. Cut pork into chunks about 1 inch size. Season with salt and pepper. Heat a large dutch oven on stove and add the oil. Brown the pork pieces in batches until browned well on all sides. Remove the pork to a plate and set aside.
  • 3. Add onions to the pan and cook until soft. Add the garlic and cook 1 minute. Add the chipotle and stir for 2 minutes. Add the chili powder mixture. Add the broth and coffee/raisin mixture. Bring to a boil. Reduce heat to a simmer and simmer 5 minutes. With an immersion blender or food processor puree until smooth Return the pork to the pan
  • 4. Place in oven bake for 2 hours. Serve over rice topped with pico de gallo and sour cream
