Caribbean Chicken image

Give a broiler-fryer chicken skillet dish Caribbean-style appeal with a quick adobo seasoning rub and rice simmered with garlic and capers.

Yield Makes 8 servings, 1 chicken piece and 1/2 cup rice each.

Number Of Ingredients 10

1 whole chicken (about 3 lb.), cut into 8 pieces
2 Tbsp. adobo seasoning
1/2 cup KRAFT Zesty Italian Dressing, divided
6 cloves garlic, minced
1 medium onion, sliced
1/2 cup HEINZ Distilled White Vinegar or lime juice
1/2 cup chopped pimento-stuffed green olives
1/4 cup capers
1 bay leaf
4 cups hot cooked rice

Steps:

  • Rub chicken with adobo seasoning; set aside. Heat 1/4 cup of the dressing in large skillet on medium-high heat. Add chicken; cook 7 to 10 min. or until lightly browned, turning occasionally. Remove chicken from skillet; cover to keep warm. Drain and wipe out skillet with paper towels.
  • Add remaining 1/4 cup dressing and all remaining ingredients except chicken and rice to skillet; cook and stir 3 min. Reduce heat to medium-low. Return chicken to skillet; simmer, covered, 45 min. or until chicken is cooked through.
  • Spoon over rice to serve.
