Caramelized Onions image

Onions of the sweet variety contain more sugar than other onions, and it is the sugar that caramelizes, giving a deep golden brown color and rich flavor. If you can't find sweet onions, regular yellow onions can be used--just sprinkle about 1 tablespoon of brown sugar over the onions and cook as directed.
