Campbell's Kitchen: Roasted Asparagus with Lemon & Goat Cheese image

After you try this recipe, it will be difficult to make asparagus any other way. You'll see how roasting the asparagus brings out exquisite flavors that are enhanced by just the right amount of goat cheese and lemon.

Number Of Ingredients 8

Vegetable cooking spray
2 asparagus
1 olive oil
Freshly ground black pepper
1/2 Swanson® Vegetable Broth
3 goat cheese
1 lemon juice
1 lemon peel

Steps:

  • 1 Heat the oven to 425°F. Spray a 17 x 11-inch roasting pan or shallow baking sheet with the cooking spray.
  • Stir the asparagus and oil in the pan. Season with the black pepper. Pour in the broth.
  • Roast the asparagus for 20 minutes or until it's tender, stirring once during cooking. Top with the cheese, lemon juice and lemon peel.
