Calypso Pork Chops image

Number Of Ingredients 11

6 pork loin chops, boneless
1 c chicken broth
1/2 c orange juice
2 Tbsp dark rum, optional
2 Tbsp lime juice
2 Tbsp brown sugar
1 garlic clove, minced
1/2 tsp salt
1/2 tsp ginger
1/4 tsp ground nutmeg
1/4 tsp dark rum, optional

Steps:

  • 1. Combine all ingredients in a zip-tight bag; seal bag and refrigerate for 4-24 hours.
  • 2. Remove chops from marinade, discarding leftover marinade.
  • 3. Grill chops quickly over indirect heat in covered grill about 10-12 minutes, turning once to brown both sides.
