6 ounces whole wheat linguine
1 lb boneless skinless chicken breast, diced into bite-sized pieces
2 tablespoons cajun seasoning
1 green bell pepper, diced
1 red bell pepper, diced
8 ounces fresh sliced mushrooms
2 green onions, thinly sliced
1 cup fat-free half-and-half
3/4 teaspoon basil
3/4 teaspoon lemon pepper
3/4 teaspoon salt
3/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 cup parmesan cheese

Steps:

  • Cook linguine until al dente.
  • Coat chicken with cajun seasoning and saute until cooked.
  • Add peppers, mushrooms and green onions; cook for 2-3 minutes.
  • Reduce heat and stir in half-and-half.
  • Add seasonings and heat through.
  • Serve over warm linguine and top with Parmesan cheese.
  • **Could add a bit of cornstarch & water with seasonings, if you want a thicker sauce. **.
