Cajun chicken & linguine image

A quick, spicy dish I came up with when I had few ingredients in the house. I needed to go shopping!! But I did have chicken, pasta and seasonings. That's all you need!

Number Of Ingredients 15

4 ounce(s) dried ronzoni healthy harvest linguine
2 - boneless, skinless chicken breasts cutlets, cut into strips.
2 tablespoon(s) butter
2 teaspoon(s) cajun seasoning
1 - green bell pepper, chopped.
1/2 - of a red bell pepper, chopped.
4 large mushrooms, sliced.
1 large green onion, finley chopped.
1-1/2 cup(s) light cream
1/4 teaspoon(s) basil
1/4 teaspoon(s) lemon pepper seasoning
1/4 teaspoon(s) salt
1/8 teaspoon(s) garlic powder
1/8 teaspoon(s) pepper
2 tablespoon(s) grated parmesan cheese.

Steps:

  • Cook pasta as directed, drain, set aside. Place chicken strips and Cajun seaoning in bowl, toss to coat. In lg skillet over medium heat, saute chicken in butter for 5-7 min. Add both bell peppers, mushrooms and green onion. Cook 3 min. Reduce heat to med-low. Stir in light cream. Season w/ basil, lemon pepper, salt, garlic powder and pepper. Heat through, stirring occasionally. In lg serving bowl, toss linguine w/ sauce. Sprinkle w/ parmesan cheese.
