1 cup (1/2) butter room temp
1/2 cup powdered sugar
2-1/3 cups all-purpose flour
4 eggs
2 cups granulated sugar
1 teaspoon grated lemon peel
6 tablespoons lemon juice
1 teaspoon baking powder
Powdered sugar

Steps:

  • In a large bowl, beat butter and the 1/2 cup powdered sugar with an electric mixer until creamy. Add 2 cups of the flour and beat until blended. Spread mixture evenly over bottom of a greased 9x13-inch baking pan. Bake in a 350 degree oven for 20 minutes. Meanwhile, in a medium-size bowl, beat eggs with an electric mixer until blended. Beat in granulated sugar until mixture is thick and lemon-coloured. Add lemon peel, lemon juice, remaining 1/3 cup flour, and baking powder; eat until mixture is smooth. Pour lemon mixture over hot baked crust. Return pan to oven and bake until topping is pale golden (15 to 20 minutes.) Sift powdered sugar lightly over top and let cool. Cut into about 2-1/4 by 2-1/2-inch bars. Store airtight Makes about 20 bars.
