BUTTERNUT SQUASH GINGER SOUP image

Number Of Ingredients 8

1 medium butternut squash
Olive Oil (or butter)
1 1/2 c. chicken stock
1/4 tsp ginger
Dash of Cinnamon
Salt
Pepper
1 c. cream (or milk)

Steps:

  • 1. Bake squash @ 425 w/ oil (or butter). 2. Puree squash; add chicken stock, ginger, cinnamon, salt & pepper in saucepan. 3. Bring to boil. 4. Reduce heat and add cream, heat through.
