Butternut squash bread pudding 11/20 image

Number Of Ingredients 9

2 tablespoon olive oil
2 tablespoon thyme leaves
1 tablespoon unsalted butter
3 heads leeks white and light green only
6 pieces eggbeaters or 6 eggs
2 1/2 cups half and half or cream and milk
1/4 cup Parmigiano-reggiano cheese grated
8 ounce French baguette crusts removed and bread cut into 1/2" pies
1 piece shallot chopped fine

Steps:

  • place squash In Mwave and cook til soft and scoop out, season w/salt and pepper add olive oil
  • Saute leeks in olive oil in Mwave until tender w/salt and pepper
  • Fold squash, leeks and shallot - could add a touch of prosciutto or bacon but we couldn't taste it
  • transfer mixture to a baking dish and bake for an hour at 400. Let stand for 15 min before serving
