Steps:
- place squash In Mwave and cook til soft and scoop out, season w/salt and pepper add olive oil
- Saute leeks in olive oil in Mwave until tender w/salt and pepper
- Fold squash, leeks and shallot - could add a touch of prosciutto or bacon but we couldn't taste it
- transfer mixture to a baking dish and bake for an hour at 400. Let stand for 15 min before serving
