1-1/2 tsp salt
1 tbsp freshly ground pepper
1 tbsp paprika
2 tbsp garlic powder
6 tbsp hot sauce
10 whole medium potatoes cut into 1/2 inch cubes skin on
2 lbs boneless skinless chicken breasts cut into 1/2 inch cubes
2 cups mexican mix shredded cheese
1 bunch green onions chopped
1 cup cooked and crumbled bacon

Steps:

  • Preheat oven to 500. Yes, 500. Spray 9x13 baking pan with Pam. Set aside. In a small bowl mix together olive oil, salt, pepper, paprika, garlic powder and hot sauce. Take about half the sauce and mix it with the cubed potatoes. Pour the potatoes into the baking dish. Bake the potatoes for 45-50 minutes stirring about every 10-15 minutes until cooked through and crispy and brown on the outside. While the potatoes are cooking marinate the chicken in the remaining hot sauce mixture. Once the potatoes are fully cooked, remove from the oven, turn the oven temperature to 400. Top the cooked potatoes with the raw chicken. Then top with the green onions, cheese and finally bacon. Return to oven and bake for 15 minute. Serve with Ranch or sour cream.
