BRUSCHETTE CON POMIDORI image

Number Of Ingredients 6

eight 1/3-inch-thick slices of Italian bread
4 T of olive oil (preferably extra-virgin)
1 garlic clove, halved
2 plum tomatoes, seeded and chopped into 1/4-inch pieces
1/2 tsp balsamic vinegar
1/4 tsp sugar

Steps:

  • Toast the bread slices on a baking sheet in the upper third of a preheated 500 degree oven for 5 minutes, or until they are golden. While the toasts are warm, brush both sides of the toast with the oil and rub them with the garlic. In a small bowl combine the tomatoes, the balsamic vinegar, the sugar, and salt and pepper to taste and top the toasts with the mixture. Serves 2.
