Broiled Salmon with Mediterranean Coleslaw image

This is my healthier version of fish and coleslaw. The flavors of the Mediterranean take center stage in the delightful salmon entree. I hope that you will try this recipe and share it with your family and friends. Cooking with Passion. sw:)

Number Of Ingredients 19

1 pound(s) salmon, fresh
1 tablespoon(s) rosemary citrus seasoning (or lemon pepper)
4 tablespoon(s) olive oil, extra virgin
2 tablespoon(s) butter, unsalted
1 teaspoon(s) course black pepper
- kosher salt to taste
2 large roma tomatoes, sliced
COLESLAW
5 ounce(s) cabbage, shredded
1/4 cup(s) bell peppers sliced (red, yellow& orange)
3 medium green onion, stalks (sliced)
1 tablespoon(s) italian parsley, chopped
1 tablespoon(s) mint, chopped
1 tablespoon(s) all purpose greek seasoning
1/4 cup(s) olive oil, extra virgin
3 ounce(s) feta cheese, crumbles
2 tablespoon(s) white wine vinegar
1 - juice of lemon
1 tablespoon(s) course black pepper

Steps:

  • in a large mixing bowl combine all the coleslaw ingredients, mix well
  • chill in fridge while preparing salmon
  • prep and clean salmon
  • carefully remove skin from salmon
  • preheat oven to broil. cut salmon into (4) 4 oz portions. in a small mixing bowl, combine rosemary citrus seasoning, olive oil, pepper and salt. brush both sides of salmon fillets and top with butter pieces. broil for 10-12 minutes. do not over cook
  • plate coleslaw and top with salmon fillets. drizzle the olive oil and butter on top of salmon. dress plate with tomato slices and sprinkle with salt and pepper
