Broccoli Turkey Salad image

This can be prepared in the morning and is ready serve to your guests for brunch, the poppy seed dressing adds the finishing touch to this salad.

1 can(s) 8 0unce pineapple chunks
3 c torn salad greens
2 c baby spinach
2 c broccoli florets
1 large green pepper, juliened
1 c thinly sliced red onion
3 c cooked, cubed turkey
dressing
1/4 c canola or vegetable oil
2 Tbsp balsamic vinegar
1/4 c pineapple juice
1 Tbsp poppy seeds
2 Tbsp honey
1 1/2 Tbsp dijon mustard

Steps:

  • 1. Drain the pineapple and save 1/4 cup for dressing. I large bowl toss together the vegetables and cooked turkey.
  • 2. In medium bowl whisk together the dressing ingredients, refrigerate....shake well and pour over salad fixings just when ready to serve......serve with garlic bread...
