BRAZILIAN TROPEIRO BEANS (FEIJAO TROPEIRO) image

Number Of Ingredients 11

. 3 cups of cooked beans
. 5 tablespoonful olive oil
. 1 tablespoonful chopped onion
. 1 tablespoonful salt with crushed garlic
. 3 cups of manioc (yucca) flower or cream of wheat
. 4 boiled or fried eggs
. 1 cup of chopped bacon
. Linguica cut in 1-inch sizes
. 1 onion cut in rings
. ½ cup olives
. Cilantro

Steps:

  • After draining the cooked beans, put the oil with the onion and the salt mix in a pan and heat it. When it's hot, add the beans, stir it and add the manioc flower or cream of wheat slowly while stirring. It should have a moisture feel to it. Remove it from the heat and fry the linguica and add it to the beans with the eggs, onion rings, olives and cilantro. Serve it with rice and salad.
