BRANDY CANDIED BUTTERY YAMS image

Yield 6 - 8 people

Number Of Ingredients 10

6 Medium cooked yams
1/4 cup brandy (1/2 if you like)
1 cup brown sugar
3 Tablespoons butter
1/4 cup freshly squeezed lemon juice and zest of lemon
or
1/4 cup freshly squeezed Orange Juice and zest of orange (your choice)
1 teaspoon nutmeg
1 stick butter
1 teaspoon cinnamon

Steps:

  • Wash yams, boil in a pot for a few minutes. Let them cool and then slide the skins off of them. Cut the yams into silver dollar like disks, a little over 1/8 inch thick. Heat and stir the sugar, zest, juice, butter, Brandy, nutmeg and cinnamon in sauce pan, do not let it get thick. Rub a little butter on the bottom and inside walls of a rectangular pyrex baking dish. Place a layer of the yams in the pyrex dish covering the bottom. Pour a small amount of the heated brandy mixture over this layer and then add a few shavings of the butter over that. Repeat this process of a layer of yams, sauce and butter shavings until the dish is full. Place this in a 375°F preheated oven for about 30 minutes. Be very careful when removing the dish from the oven not to spill any of the extremely hot liquid onto yourself.
