BRAD'S CHILI CON CARNE image

Olive oil
3 LBS coursely ground beef chuck
3 Medium onions, chopped
3 TBS minced garlic
3 Aniheim chilis, roasted, peeled and pureed
1/3 Cup chili powder
1 35 Oz. can Italian plum tomatoes corsley chopped with their licquid
1/2 Cup tomato sauce
2 Cups beef broth or water
1 12 Oz. can of flat beer
3 TBS red wine vinegar
3 Cups cooked kidney or other beans, or combination, drained and rinsed
2 TSP each pepper and paprika
1 TSP cumin
3 to 4 drops of hot pepper sauce or to taste

Steps:

  • In a large skillet heat oil and lightly brown beef; about 10 mins. Drain beef and reserve 3 TBS fat. Add onions and simmer until translucent, about 8 mins. Add garlic and simmer 1 min. In a large flameproof casserole combine beef, onions and garlic with all remaining ingredients except beans. Simmer, skimming off grease for 35 minutes. Add beans and simmer 10 minutes longer. Remove from heat, let stand for 3-4 hours. Reheat and serve.
