BOLICHE (CUBAN POT ROAST) image

Number Of Ingredients 15

6 links Spanish Chorizo
3-4 lb. chuck or rump roast
7 cloves garlic, mashed
1 t salt
1/2 t pepper
Flour
1/2 c olive oil
1 14 1/2 oz can diced tomatoes
1 bay leaf
1 T oregano
4 med potatoes, quartered
1 large onion, sliced
1/2 c. green olives
1 c water
1/2 c red wine

Steps:

  • Remove casings from chorizo. Cut slit in beef and stuff with chorizo and some of garlic. Salt, pepper and lightly flour roast. Brown on all sides. Add remaining ingredients. Bring to a boil, reduce heat to low and simmer partly covered 3-4 hours.
