BLUEBERRY BREAD image

Number Of Ingredients 12

1 ¼ c milk
1 tsp vanilla
3 T unsalted butter
¼ c sugar
2 tsp salt
3 ¼-3 ½ c flour
¾ c old fashioned oats
2 tsp instant yeast
½ c dried blueberries, cranberries or apricots
Topping
1 T melted butter
1 T cinnamon sugar

Steps:

  • Dough- Mix together all of the ingreds expect the berries and topping, till you have a smooth, elastic dough. Add he berries, kneading until they are evenly incorporated. Place the dough into lightly greased bowl and let rise till doubled, 1- 1 ½ hours. Shape dough into loaf and place in greased 9x5 loaf pan. Cover the pan and let rise till dough crowns over the rim of the pan, about 1 hour. Bake in a preheated 350 oven, 40-45 minutes. Remove the loaf when is golden brown and firm to touch, turning it out onto cooling rack. Brush with melted butter and sprinkle with sugar.
