BLUEBERRY BARS image

Number Of Ingredients 8

2 1/2 cup flour
1 cup shortening
1 tsp salt
1 egg separated
1 1/2 cup cornflakes
4 cups blueberries
1 cup sugar
1 tsp cinnamon

Steps:

  • Combine flour, salt and shortening. Mix until crumbly. Beat egg yolk, add enough milk to make 2/3 cup liquid. Stir into flour mix. On floured surface, roll 1/2 of dough to a 12x17 rectangle. Place on cookie sheet. Sprinkle dough with cornflakes and top with berries. Sprinkle sugar and cinnamon on top. Roll out remaining dough and place over berries. Seal the edges. Brush the top with egg white. Bake at 375 for 50 minutes. Remove from oven and glaze with 1 cup of powdered sugar mixed with 3-4 tsp milk. Cool and cut.
