BLUE DOG BAKERY SPICY TUNA SALAD image

3 6-ounce cans water-packed tuna, drained
1/2 cup green olives, chopped
2 to 3 green onions, chopped
1/3 cup capers, drained and coarsely chopped
1 jalapeno pepper, seeded and minced
1/2 cup extra virgin olive oil
1/2 teaspoon red pepper flakes
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • In a bowl, combine the drained tuna, chopped olives, green onions, caper and jalapeno and mix well. Fold in the olive oil, red pepper flakes and lemon juice, being careful not to break up the tuna too finely - this should be a slightly chunky sandwich. Taste, and adjust seasoning with salt and pepper. Serve on a dense bread to absorb the olive oil better.
