BLACKENED FILET MIGNON image

4 filet mignon steaks (6-oz. ea.) room temperature
6 tablespoons butter melted
1 1/2 teaspoons garlic powder
1 teaspoon oregano
1 teaspoon thyme
1 1/4 teaspoon red cayenne pepper
1 1/2 tablespoon paprika
2 teaspoons salt
1 tablespoon coarse ground black pepper

Steps:

  • Bring steaks to room temperature. In small bowl, combine garlic powder, oregano, thyme, cayenne pepper, paprika, salt and pepper; set aside. Melt butter. Heat dry large heavy skillet over high heat until extremely hot. Dip steaks into melted butter on both sides to lightly and evenly coat. Transfer steaks to plate; sprinkle and pat in steak seasoning on both sides. Carefully place steaks in dry hot skillet and cook for 2 minutes on first side, then 1 1/2 minutes on second side. Transfer to cutting board and let rest for 2 minutes. Slice the steaks. Serve with fresh salad, vinaigrette dressing with crumbled blue cheese on top, fresh warm crusty bread and glass of red wine.
