BLACKBERRY, GOAT CHEESE & ROASTED BEET SALAD W/LEMON VINAIGRETTE image

Number Of Ingredients 15

1# beets, rinsed and trimmed
2T olive oil
9c mixed greens
1/3c pecans or walnuts, toasted
Goat cheese, amount to taste
1/2c blackberries
Lemon Vinaigrette
1/2c olive oil
Zest from 1 lemon
1/4c lemon juice
1/2t tarragon
1-2T honey
1t dijon mustard
1/2t salt
1/8 pepper

Steps:

  • Toss beets in olive oil. cover and bake at 425 degrees for 40 min. or until tender. Once cooled, peel and slice into 1/4 in. thick slices. Toast nuts . Combine ingredients for vinaigrette and shake well. Combine greens with beets, goat cheese. Toss with vinaigrette and top with nuts.
