2 teaspoons olive oil
1 cup onion, chopped
1 cup ham, diced
2 (15 7/8 ounce) cans black-eyed peas, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic, undrained
1/4 teaspoon black pepper

Steps:

  • Heat oil in a large saucepan over medium-high heat.
  • Add onion and ham; saute 5 minutes or until onion is tender.
  • Stir in peas and remaining ingredients and cook until heated.
