BLACK BEAN CASSEROLE image

Number Of Ingredients 12

2 tbls olive oil
1 medium red onion
2 cloves garlic
2 red or yellow peppers
4 tomatillos
4 ripe roma tomatoes
2 13oz cans black beans
1/2 lb Monterey Jack
1 cup sour cream
1/4 cup chili sauce
1 cup bread crumbs
1 tsp oregano

Steps:

  • 1. Using an ovenproof casserole dish, heat the olive oil over medium heat and add onion, garlic, peppers, and tomatillos. After they have softened, add tomatoes. Cover and simmer for 10 minutes. 2. Stir in 1 can of the beans; sprinkle with salt, pepper, and half the cheese, mixing well. 3. Mix the sour cream and chili sauce. Mix with the other can of beans, sprinkle with more salt and pepper. Spoon mixture over the casserole. Make the topping by mixing the remaining cheese with bread crumbs and oregano. 4. Bake in a 350 degree oven for 25 minutes or until the topping is browned and the beans are hot. When serving, dig the spoon deeply to get all of the flavors!
