Big Ray's Scotch Date Roasted Potatoes image

A nice side for that steak you have grilling up for dinner.

cooking spray
2 pounds red potatoes, quartered
½ cup chopped dates
¼ cup Scotch whiskey
¼ cup balsamic vinegar
2 tablespoons butter, melted
1 tablespoon minced fresh rosemary
2 cloves garlic
½ teaspoon kosher salt
½ teaspoon ground black pepper
¼ cup crumbled blue cheese
3 scallions, thinly sliced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with aluminum foil and grease with cooking spray.
  • Place potatoes in a large bowl.
  • Combine dates, whiskey, balsamic vinegar, butter, rosemary, garlic, salt, and black pepper in a food processor; puree into a smooth sauce. Pour sauce over potatoes and mix until completely coated. Spread potatoes out on baking sheet.
  • Bake in the preheated oven until potatoes are browned and tender, 25 to 35 minutes. Serve with blue cheese and scallions.
