first tried this when my mother was hosting a dinner party. She had asked me to spread it on party rye bread slices for her. Of course, I had to try it and it was delicious!! 8 oz cream cheese, room temperature
1 Tbsp hellmann's mayonaise
2 drops green food coloring
1/2 medium onion, finely grated
1 large cucumber, peeled and seeded
1-3 dash(es) tobasco sauce
1 pkg party rye bread
assorted crackers

Steps:

  • 1. Grate the cucumber. Place in cheesecloth and squeeze liquid out. Set aside.
  • 2. In a medium bowl, beat cream cheese til fluffy. Stir in cucumber and remaining ingredients except for the bread and crackers. Adjust the consistancy with more or less mayonaise. (I prefer a bit more mayo).
  • 3. Cover and chill at least 4 hours (overnight is better). Spread Benedictine on bread. You can top them with a thin slice of green olive or roasted red pepper. Place some in a bowl with crackers for dipping.
