BEET SALAD WITH GINGER DRESSING image

Yield 2-3 people

Number Of Ingredients 7

3 yellow beets
about 1-1 1/2 inches of fresh ginger finely minced
just less than 1/4 cup of white wine vinegar
just less than 1/4 cup of olive oil
1 and a half handfuls of mixed baby greens (mixed leaf salad)
2 garlic scapes, cut in 1/8 inch pieces (optional since it is so seasonal)
Salt and pepper to taste

Steps:

  • 1. Set the oven to 350. Scrub the beets and wrap them individually in foil. Set them on a baking sheet and roast for about an hour (until they are tender). When they are done take them out of the oven and set aside for a few minutes until they are cool enough to handle. With a paper towel, rub the skins off. 2. In a bowl whisk together the vinegar with the ginger. Slowly whisk in the olive oil, salt and pepper. If using add the garlic scapes. Mix everything together well, so that it does not separate and set aside. 3. Cut the beets into bite size pieces and place in a serving bowl. 4. Wash and dry the lettuce and place in the bowl with the warm beets. 5. Whisk together the dressing one more time so that it does not separate, and pour over the beets and lettuce. Toss and serve.
