BEET AND FENNEL SALAD image

1 large cooked beet ( I used 2)
1 fennel bulb trimmed, cored and sliced thinly
1 appple unpeeled, cored and chopped
6 cups arugula leaves
1 cup crumbled blue cheese
1/2 cup chopped walnuts
1/4 cup olive oil
1/4 cup apple cider vinegar

Steps:

  • Make thin strips with the beets. Mix all ingredients. (I added greens at the very end.)
