Beer Queso Dip image

Add chopped onion simmered in beer to this Beer Queso Dip. You can serve this Beer Queso Dip with soft pretzel bites or assorted vegetables-your choice!

1 Tbsp. Parkay® Original Spread- tub
3/4 cup chopped onions
1 cup beer
1 lb. (16 oz.) VELVEETA, cut into 1/2-inch cubes
1 can (10 oz.) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained

Steps:

  • Melt PARKAY in medium skillet on medium heat. Add onions; cook 5 to 7 min. or until crisp-tender, stirring frequently. Stir in beer; simmer on medium-low heat 3 min., stirring occasionally.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray.
  • Add VELVEETA and tomatoes; mix well. Cover.
  • Microwave on HIGH 5 min. or until VELVEETA is completely melted and dip is well blended, stirring after 3 min.
