BEEF STEW IN A PUMPKIN image

Number Of Ingredients 22

1 c flour
salt
2 lbs beef cubes for stew
olive oil
1/2 c brandy
1 c chopped onion
1 c chopped pepper
3 garlic cloves
3 c beef stock
1 cup dry sherry
3 tomatoes
2 bay leaves
1/2 tsp oregano
1 1/2 lbs potato peeled and cubed
1 lb sweet potato peeled and cubed
1 lb zucchini sliced thick
3 ears corn 1in rounds
16 pitted prunes
1 10-12 lb pumpkin
1/2 c butter
1 c brown sugar
4 tbsp cinnamon

Steps:

  • toss beef in flour, salt and pepper and brown add brandy to deglaze and set aside. cook onions, pepper and garlic until soft, add stock, wine, beef, bay leaves, oregano and simmer until beef tender. 45 minutes approx. Add potatoes and cook 15 minutes. Add corn cook 5 minutes, add zucchini cook 3 minutes. 375 degree oven. cut top off pumpkin, clean out seeds and string coat inside with butter, sprinkle sugar and cinnamon and cook until inside soft but pumpkin able to hold shape and stew. Add juices from pumpkin to stew and return to pumpkin and bake 15 minutes. Both can be made ahead and warmed seperately.
