Beef Fajita Casserole image

We love this on a cool, or cold, evening. It is an easy fix and satisfies everyone!

Number Of Ingredients 8

1 pkg red beans and rice mix
1 can(s) black olives, sliced (4oz)
1 can(s) green chilies, drained (4oz)
1 lb beef, ground
14 1/2 oz tomatoes, diced
2 c monterrey jack cheese, shredded
2 c colby jack cheese, shredded
1 c tortilla chips, crushed

Steps:

  • 1. Brown ground beef and drain grease away.
  • 2. Prepare rice mix according to package instructions.
  • 3. When rice is done, add the olives, chilies and tomatoes and mix in the ground beef.
  • 4. Add chili powder and cajun seasonings to taste.
  • 5. Pour in casserole dish and sprinkle cheese and chips on top.
  • 6. Place in oven at about 325 degrees for long enough to melt the cheese.
  • 7. Serve.
