Beef Barley Soup image

Number Of Ingredients 8

1 lb beef, cut to small cubes
olive oil
4 carrots, diced
2 onions, diced
28 oz tomatoes, diced
4 celery stalks, finely chopped
8 oz barley, uncooked
64 oz beef stock

Steps:

  • 1. Brown beef in skillet with olive oil.
  • 2. Combine the rest of the ingredients.
  • 3. Add beef.
  • 4. Simmer on low heat for at least 4 hours.
