Bean Soup image

Wow even folks who say they don't like lima beans with this tasty Bean Soup. This Bean Soup is enhanced with bacon and smoked turkey sausage.

2 cups dry lima beans
2 slices OSCAR MAYER Lower Sodium Bacon
1 pkg. (10 oz.) frozen corn
1/4 lb. OSCAR MAYER Natural Uncured Turkey Sausage, thinly sliced
1 onion, chopped
4-1/2 tsp. flour
1-1/2 cups water
dash pepper

Steps:

  • Place beans in large saucepan. Add enough water to cover beans. Bring to boil; simmer on medium-low heat 2-1/2 hours or until tender.
  • Cook bacon in large skillet on medium heat until crisp. Drain on paper towels, reserving drippings in skillet for later use.
  • Crumble bacon. Add to beans along with the corn, sausage and onions; mix well. Simmer on medium-low heat 1 hour.
  • Stir flour into reserved bacon drippings in skillet; cook on medium-low heat until hot and bubbly, stirring frequently. Gradually stir in water until well blended; cook on medium heat until mixture comes to boil and thickens, stirring constantly. Add to soup; simmer 30 min., stirring occasionally. Stir in pepper.
