Bean Medley Salad image

Number Of Ingredients 10

1 can Unico Bean Medley
2 Green onions chopped
1/4 cup Red onion
2 stalks Celery
1 tablespoon Olive oil
2 tablespoons Lime juice
1 teaspoons Curry
2 teaspoon Cumin
1/4 cup Cilantro fresh chopped
1 cup Grape tomatoes halved

Steps:

  • Combine first four ingredients in a medium size bowl.
  • Whisk together olive oil and lime juice.
  • Toast curry and cumin in a frying pan over low heat until fragrant. Add to olive oil and lime juice mixture.
  • Add dressing to bean mixture and mix. Chill for 4 hours.
  • Garnish with cilantro and grape tomatoes before serving
