Number Of Ingredients 4

4 (9- to 10-inch) flour tortillas
2 cups refried beans, canned or homemade
1 1/2 cups shredded Monterey Jack cheese or cheddar cheese
1/2 cup fresh salsa, purchased or homemade

Steps:

  • 1. Soften the tortillas in a large hot dry skillet, or heat in the microwave according to microwave instruction, until soft and pliable. 2. Spread each soft warm tortilla with 1/4 of the beans and top equally with shredded cheese. Fold in the sides and roll in a cylinder. 3. Heat skillet or griddle over medium-high heat, then place burrito seam-side down on the hot skillet and cook briefly, turning, until the cheese melts, about 2 minutes. Serve hot with the salsa to add while eating. From "1,000 Mexican Recipes." Copyright 2001 by Marge Poore. Used with permission of the publisher, Wiley Publishing, Inc. All Rights Reserved.
