Steps:
- In a 3 1/2- or 4-quart slow cooker combine carrots, lentils, uncooked brown rice, onion, brown sugar, mustard, salt, garlic, and cayenne pepper. Stir in broth.
- Cover and cook on high-heat setting for 3 to 3 1/2 hours. Stir in mushrooms, tomato sauce, and vinegar. Cover and cook on high-heat setting for 30 minutes more.
- To serve, use a slotted spoon to spoon meat mixture onto bun bottoms. If desired, add desired toppers. Cover with bun tops.
