Steps:
- 1. Melt butter in a frying pan. Add the onion and barley and cook until onion is tender and barley is lightly browned.
- 2. Add the beef broth, canned mushrooms with liquid and nutmeg. Put all ingredients in a large baking dish.
- 3. Bake, uncovered in a 350 degree oven for 60 plus minutes, or until all liquid is absorbed. In my oven, it takes at least 75 minutes. This is a great alternative to potatoes.
