BARB'S CHOCOLATE MOUSSE image

8 oz. semisweet baking chocolate, broken into pieces
2 tablespoons butter
ΒΌ cup water
5 eggs, whites separated from yolks
1 tablespoon rum

Steps:

  • Put chocolate in a saucepan with the butter and water. Cook over very low heat until the mixture becomes a smooth paste. Take the pan off the heat and work in the yolks one by one, using a wooden spoon. (Sometimes it sort of curdles at this point. If it does, just keep beating the mixture until it's nice a silky smooth again. Taking turns with a friend may help, because sometimes it really takes a while!) Add the rum. Beat the egg whites until they stand in stiff peaks, then fold them gently into the chocolate mixture. Pour the mousse into a deep 5-cup mold and leave overnight in the refrigerator. (Instead of using a mold, I just divide it into some kind of desert bowls or ramekins.)
