BARBECUE BEEF SANDWICHES image

1 1/2 pounds beef boneless round steak
1/2 tsp. salt
1/4 tsp. pepper
2 cups coleslaw mix or shredded cabbage
1 medium onion, chopped
1/4 cup uncooked long-grain rice
1/2 cup barbecue sauce
1/2 cup water
8 buns
8 slices Colby-Monterey Jack cheese (optional)

Steps:

  • REmove fat from beef. Cut beef into 3-inch pieces. Sprinkle beef with salt and pepper. Mix coleslaw mix, onion, rice, bbq sauce and water. Layer beef and coleslaw mixture in slow cooker. Cover and cook on low heat setting about 8 hours or until beef is tender and falls apart when stirred with fork. Fill buns with beef mixture. Top with cheese. Can broil cheese.
