My youngest son loves these cookies. He is the type of child that would prefer a healthy snack over junk food. This cookie is a combination of both.

Steps:
- 1. Preheat oven to 375*. Lightly grease cookie sheets.
- 2. Place flour, baking powder, and salt in small bowl; stir to combine.
- 3. In a separate bowl, beat butter and sugars at medium speed until light and fluffy. Beat in banana, egg, and vanilla.
- 4. Add in flour mixture. Beat at low speed until well blended. Stir in walnuts if desired. (Dough will be soft.) Drop rounded teaspoonfuls of dough 2 inches apart onto prepared cookie sheets.
- 5. Bake 9-11 minutes or until edges are golden brown. Let cookies stand on cookie sheets for 2 minutes. Remove cookies to wire racks; cool completely. Store in tightly covered container at room temperature.
