BANANA NUT BREAD image

Number Of Ingredients 10

1/3 cup butter
1/2 cup sugar
2 eggs
1 3/4 cup gluten free flour
1 teaspoon guar gum
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe banana
1/2 cup chopped pecans

Steps:

  • ~ Preheat oven to 350 degrees. Cream together butter and sugar. Add eggs and beat well. Sift together dry ingredients. Add to butter mixture, alternating with bananas and blendinng well after each addition. Stir in nuts. Pour into a well greased loaf pan or mini loaf pans. Bake for 20-45 minutes, depending on pan. Remove from oven and cool in pan for 10 minutes. Remove from pan and allow to cool on rack.
