Banana Bread image

A fantastic recipe for banana bread. Sour cream makes a tender bread. Full of banana and buttery flavor, we like the crunch and texture from added pecans. Cinnamon sugar on the outside adds a hint of cinnamon flavor. If you love banana bread make sure to try this recipe.

1 stick butter, room temperature
1 c sugar
2 eggs
1 1/2 c all-purpose flour
1 tsp baking soda
1 tsp salt
2 ripe bananas, mashed
1/2 c sour cream
1 tsp vanilla
OPTIONAL
cinnamon sugar to dust pan
1/2 c chopped pecans

Steps:

  • 1. Preheat the oven to 350 degrees.
  • 2. Grease loaf pans (I use cooking spray) and then lightly dust the interior with cinnamon sugar.
  • 3. With an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs, beating well.
  • 4. Add flour, baking soda, and salt. Blend well.
  • 5. Add bananas, sour cream, and vanilla.
  • 6. Fold in pecans.
  • 7. Pour mixture into the prepared pans.
  • 8. Bake for 50 minutes to 1 hour or until a cake tester comes out clean.
